Strawberry Herb Bruschetta

This is an easy way to make Bruschetta. The recipe substitutes diced strawberries for what is typically tomatoes, or olives. Try it. You'll love it.

Strawberry Balsamic Vinegar
Tuscan Herb Olive Oil
Bruschetta Seasoning

Ingredients

2 cups diced ripe strawberries
1 baguette, cut into 1" slices
2 cups ricotta cheese
1 tsp kosher salt
1 tsp freshly ground black pepper
2 Tbsp fresh basil, chopped
4 Tbsp Strawberry Balsamic Vinegar
4 Tbsp Tuscan Herb Olive Oil
2 Tbsp Bruschetta Seasoning

Preparation

  1. In a medium bowl, combine the strawberries, Bruschetta Seasoning, 3 Tbsp Tuscan Herb Olive oil, balsamic vinegar, 1/2 teaspoon salt and 1/4 teaspoon pepper. Let rest for 30 minutes, stirring now and then.
  2. Place baguette slices on a medium sheet tray and drizzle or brush with Tuscan Herb Olive Oil. Bake at 375'F until bread is toasted, about 10 minutes.
  3. In a medium bowl, mix the ricotta with remaining 1/2 tsp salt, pepper, chopped basil and 1 teaspoon Tuscan Herb Olive oil. Spread each toast generously with ricotta mixture then top with strawberry mixture.
  4. Garnish with basil and drizzle with more balsamic if desired. Serve.
