Tuscan Herb Grilled Chicken Strawberry Salad

 

With Strawberry season well underway, what better way to use up those sweet juicy fruits than in a healthy grilled chicken salad. It starts with a marinade that will infuse your protein with delicious flavor and tenderize it too. Being a salad, there are tons of variations, so use your favorite additions to create a salad you’ll enjoy.

Tuscan Herb Olive Oil
Strawberry Balsamic Vinegar
Garlic Himalayan Sea Salt

Chicken

4 skinless, boneless chicken breasts
4 Tbsp Strawberry Balsamic Vinegar
4 Tbsp Tuscan Herb Olive Oil
2 tsp Garlic Himalayan Sea Salt

2 Tbsp Bruschetta Seasoning
Fresh black pepper

Salad

8-10 ounces arugula and spinach greens, a 50/50 mixture
¼ cup Italian parsley leaves (tender, stems are okay)
¼ cup basil leaves
1 pound strawberries, hulled and quartered
1 English cucumber, chopped
1 pint cherry tomatoes (any color), sliced in half
¼ cup sliced red onion (tip: soak the onion in cold water for 5-10 minutes to cut the harshness of the onion)
½ cup crumbled feta cheese
½ cup toasted almonds

Dressing

¼ cup Tuscan Herb Olive Oil
2 Tbsp Strawberry Balsamic Vinegar
Squeeze of a fresh lemon

Preparation

  1. Combine 4 tablespoons oil, 4 tablespoons vinegar, and the Bruschetta Seasoning in a large zip-top plastic bag. Add chicken to bag; seal. Let stand at least 30 minutes, may leave overnight. Turn occasionally.
  2. Heat a grill pan or grill over medium-high heat. Remove chicken from marinade; discard marinade. Sprinkle chicken with Garlic Himalayan Salt and fresh black pepper. Add chicken to pan; grill 5-6 minutes on each side or until done. Cut into slices and place on top of the salad.
  3. In a large bowl, place the arugula and spinach. Add the strawberries, tomatoes, cucumber, and chopped herbs Sprinkle with salt. Drain the red onion, pat it dry, and add it as well. Add the chicken. Spoon about half of the dressing over the salad and toss to coat (I find that clean hands are an ideal tool for tossing). Assess the amount of dressing. You want the leaves to be nicely moistened but not swimming in dressing. Add a little more if needed to suit your preferences.
