Fresh Mixed Berry Cobbler

This quick and easy way to make cobbler is wonderful with any or all berry varieties. Fresh is best but this can certainly be made with frozen fruit as well. Perfect for the end of Summer cook outs!

Lime Olive Oil
Blackberry Ginger Balsamic Vinegar

Ingredients

3 lbs of mixed berries (Blueberries, Raspberries, Blackberries, Strawberries, etc.)
1 Tbsp Lime Olive Oil
1 Tbsp Blackberry Ginger Balsamic Vinegar
1 ½ cups dark brown sugar
1 ½ cups old-fashioned oats (not instant)
1 cup flour
½ cup freshly grated Parmesan Cheese (trust me)
1 tsp Cinnamon
1 teaspoon salt
1 stick of sweet butter (I use salted), chilled and cut into ¼” bits

Preparation

In a big bowl, gently mix the berries with oil and vinegar until well distributed and pour into a 9" x 12" baking dish.

In a separate bowl, mix sugar, oats, flour, cheese, salt and cinnamon.

With a hand mixer or fingers, quickly mix the butter bits into the sugar mixture to create a coarse meal. It should be loose and crumbly.

Gently sprinkle the topping mixture over the fruit.

Bake in a preheated 375° oven for about 35 minutes, until the top is lightly browned, and the fruit is bubbling.

Serve warm with a scoop of Vanilla Ice Cream and a drizzle of Extra Virgin Olive Oil (again, trust me).
