Olio Nuovo 2026 - The Freshest Olive Oil of the Season - Pressed and Harvested Oct. 26
128 Mill St
Grass Valley CA 95945
United States
Our first oil of the season is here, pressed just days after harvest and bottled straight from the mill. Olio Nuovo, Italian for "new oil," is olive oil at its most alive: vibrant green, bursting with flavor, and here for a short time only.
From the first pour, it opens with a lush, herbaceous aroma of fresh-cut grass and green garden herbs, followed by crisp notes of fresh red apple. Then comes the peppery finish that olive oil lovers wait for all year, a lively tingle at the back of the throat that tells you this oil is as fresh as it gets.
Enjoy it fresh. Treat Olio Nuovo like fresh fruit or vegetables: the sooner you enjoy it, the better. We recommend using it within 4 months of the harvest date to experience its freshest flavors and characteristics.

Thanks to its status as a spotlight food in the Mediterranean diet, and thanks to extensive research on its unique phytonutrient composition, olive oil has become a legendary culinary oil with very difficult to match health benefits.
Polyphenols have been shown to function as both antioxidants and as anti-inflammatory nutrients in the body. The very number and variety of polyphenols in olive oil helps explain the unique health benefits of this culinary oil. Because of the high polyphenol levels, as little as 1-2 tablespoons of extra virgin olive oil per day have been shown to be associated with significant health and anti-inflammatory benefits.
