We currently have such a fantastic variety of Extra Virgin Olive Oils right now, I chose to include these in the Pairing as a base for all your home cooking. These oils are all 2023 harvest and are full of fresh flavor. I could gush for an hour over the taste and health benefits of the EVOOs that I curate into the store. They are always the very, very best that you can find anywhere. Our current assortment is no exception.

To pair with EVOO is a product I finally found the right vendor for last fall; Italian Balsamic Vinegar. I love the slight minty after taste. A tablespoon or 2 of this savory white balsamic with a few tablespoons of EVOO, a few sauteed veggies with even plain tomato sauce (or your favorite bottled sauce) and you've got an unbelievably delicious and inexpensive pasta meal. Or just mix the oil and vinegar together for a perfect Italian vinaigrette. .

What makes this hearty soup amazing is it's variety of ingredients and distinctive herby tomato flavor. It's vegetarian and full of protein and vegetables. A fun soup base to use up leftover veggies of all kinds, too. This soup can easily be prepared in a Dutch oven (as in the recipe) or a crock pot. 😊
