Lime Olive Oil & Blackberry Ginger Balsamic Vinegar
This month’s pairing features Blackberry Ginger Balsamic and Lime Olive Oil. The duo together are powerful.
The Blackberry Ginger Balsamic Vinegar features the luscious sweet-tart flavor of ripe Blackberries, accented by the tangy but gentle spiciness of fresh ginger. The subtly sweet berry character with ginger overtones does wonders for a simple fruit salad (my inspiration for the recipe). This ginger-accented vinegar will provide an Asian dimension to stir-fry dishes and reduction sauces. Try it as a glaze on barbequed chicken or pork tenderloin.
The Lime Olive Oil is bright and very flavorful. Customers love to cook tortilla shells in it, drizzle it on their popcorn and it is wonderful over ice cream. It is a delightful base to a vinaigrette, or a marinade or anywhere you want a pop of citrus flavor.
Recipe
This quick and easy to make cobbler is wonderful with any or all berry varieties. Fresh is best but this can certainly be made with frozen fruit as well. Perfect for the end of Summer cook outs!
