Summer White Bean Salad

Just like potato or pasta salad, the humble white bean can be the platform for a cast of added participants. In this delicious example, a different group of easy to find summer fresh star players, with the right dressing creates magic.

Jalapeño Olive Oil

Ingredients

1 cup cooked and drained white beans
1 cup celery, small dice
1 cup corn
½ red bell pepper, small dice
1 handful cherry tomatoes, sliced in half
1 handful chopped parsley
chopped basil for garnish

Dressing Ingredients

3 Tbsp Sex on the Beach Balsamic Vinegar
2 Tbsp Jalapeno Olive Oil
¼ tsp dry mustard
1 tsp lemon juice

Salt & Pepper to taste

Preparation

1. In a small bowl prepare dressing and set aside.
2. In a large bowl, combine all salad ingredients and mix until well blended.
3. Add dressing and toss to coat.
