Stone Fruit Salad with Plum and Blood Orange Dressing with Grilled Protein

Add the Protein of your choice and get the full depth of the stone fruit (peaches, apricots, plums, etc.) pushed forward by the citrus tang of the Blood Orange. (Protein possibilities: Salmon, Ahi, Chicken, Tofu… it’s YOUR choice!). Adjust all the quantities to the number of people you intend to serve.

Blood Orange Olive Oil
Plum Balsamic Vinegar
Santa Maria BBQ Seasoning

For the Salad

Greens (your favorites in an assortment)
Fresh Peach
Fresh Plum
Candied Pecans
Feta Cheese - crumbled
Mint - chopped

For the Dressing

1-2 Parts Plum Balsamic Vinegar
2 Parts Blood Orange Olive Oil
Santa Maria BBQ Seasoning (enough for the protein)

Preparation

  1. Whisk Dressing ingredients in a bowl. (For a creamy dressing add 1 Part Mayonnaise or Greek Yogurt)
  2. Toss all of the Salad items then put the Dressing on it and toss it some more.
  3. Lightly coat all sides of the protein with Blood Orange Olive Oil, then season with the Santa Maria BBQ Seasoning.
  4. Grill to taste and place on top of the salad.
