Rosemary Roasted Strawberries

This makes an excellent savory-sweet topping for a wheel of brie or as a crostini topping with any soft cheese.  Try it over ice cream! 

Rosemary Infused Olive Oil

Mission Fig Aged Balsamic Vinegar


3 c. hulled, whole strawberries, rinsed & dried
3 Tbsp Rosemary olive oil
½ tsp. coarse salt
½ tsp. ground black pepper
2 Tbsp honey
2 Tbsp Mission Fig Balsamic Vinegar


  1. Preheat oven to 350°
  2. Line a baking with aluminum foil and a sheet of parchment paper
  3. Toss all above ingredients in a bowl and lay out in a single layer on prepared pan
  4. Roast 20-30 minutes. Berries will soft, but should retain their shape
  5. Allow to cool and then re-toss gently with Mission Fig Balsamic Vinegar
