Let's use up some of those fresh garden cucumbers! This easy salad is fresh and perfectly balanced with sweetness and tang. The added mint really livens it up and adds a next level of flavor. I like to add some avocado to get some protein in there. It makes a really good lunch!
Ingredients
1 lb cucumbers (roughly 6 Persian or 1 English)
½ tsp Salt
3 tbsp Honey Ginger Balsamic Vinegar
½ small red onion
1 tbsp Toasted Sesame Oil
2 tbsp fresh chopped dill
1 tbsp fresh chopped mint
4 oz crumbled Feta cheese
1 small avocado, sliced (optional for some added protein)
1 tbsp Everything Bagel Seasoning
Instructions
- Peel the cucumbers in alternating strips and trim ends. If desired, halve lengthwise and scoop out the seeds. Thinly slice, then transfer to a colander set in the sink. Toss with 1 teaspoon kosher salt or ½ teaspoon fine sea salt and set aside to drain at least 5 minutes or up to 30.
- In a medium bowl, stir together Honey Ginger Balsamic Vinegar, Toasted Sesame Oil, and the Everything Bagel Seasoning until combined. Shake the cucumbers in the colander to get rid of any moisture, then transfer the cucumbers, avocado (if using), red onion, dill, and mint to the bowl. Stir to combine.
- Sprinkle the crumbled Feta cheese on top and season to taste with salt and pepper. Garnish with more fresh dill and mint if desired. Serve and enjoy!
