Honey Ginger Dill Chicken Kabobs

Kabobs are one of my favorite grilling options. I make these grilled chicken kabobs constantly during the summer months. They are a perfect combination of tender marinated chicken with a variety of veggies. The dill and honey ginger make an excellent marinade that is sure to delight. This recipe works great with salmon too.

Honey Ginger Balsamic Vinegar
Dill Olive Oil
Everything Bagel Seasoning
Himalayan Garlic Salt

Ingredients

1.5 lbs boneless, skinless chicken thighs or breast cut into 1.5-inch pieces
3 tbsp Dill Olive Oil
3 tbsp Honey Ginger Balsamic
1 1/2 tsp Garlic Himalayan Salt
1 tbsp Everything Bagel Seasoning
Optional: Veggies! Any you like on the grill. Cut them into chunks.

Instructions

Prepare Skewers: If using wooden skewers, soak them in water for at least 15 minutes before using.

Marinate Chicken: In a large bowl, combine the chicken pieces, Dill Olive Oil, minced garlic, Honey Ginger Balsamic, Everything Bagel Seasoning, and Garlic Himalayan Salt. Toss to coat evenly.

Marinate at room temperature for 15-20 minutes, or for more flavor and juicier meat cover and refrigerate for up to overnight. The longer the better.

Cook Chicken

Grill Option: Thread the marinated chicken pieces (alternating with veggies if using) onto the skewers.
Grill for 10 minutes, turning once, until the chicken is cooked through, and the edges are lightly charred.

Broiler Option: Preheat the broiler and line a baking sheet with parchment paper or aluminum foil. Position an oven rack about 5 inches from the heating element.
Broil for 12-15 minutes, turning once, until the chicken is cooked through, and the edges are lightly charred.

Serve: Accompany with a dollop of plain yogurt seasoned with a pinch of salt, fresh dill, and more Everything Bagel Seasoning if desired. You can also mix up more Dill Olive Oil and Honey Ginger Balsamic and drizzle over the skewers while still hot for an added burst of flavor!
