Osetra Caviar is noted for its bright amber brown-black, medium grain size, and a clean rich nutty finish. This product is the perfect choice for caviar bumps and pairs beautifully with any brut Champagne.
Acipenser gueldenstaedtii, commonly known as Russian Sturgeon or “Osetra,” live in coastal areas and prefer sandy beds and mudflats. They feed on small fish, mollusks and crustaceans, and reproduce in rivers from May until June. Tsar Nicolai has reproduced a similar environment for this ancient fish in its Greek farm, which is now Eco-Certified.

Baerri Caviar is gray to black in color with small to medium grain size with a unique sweet brine finish. It's wonderful on its own or incorporated as a topping on seared scallops or sauteed fish.
Acipenser Baerii is a river sturgeon found in Siberia. It inhabits deep parts of large rivers with moderate to swift current. They can live up to 60 years and weigh up to 140 lbx. Tsar Nicolai has reproduced a similar environment for this ancient fish in its Greek farm, which is now Eco-Certified.
