Steak Salad with Basil-Strawberry Vinaigrette

In the deep of winter we can still enjoy the luscious summer flavors of basil and strawberry with this simple, yet hearty steak and arugula salad.

Ingredients

For the Salad:
8 oz flank steak or top sirloin
2 tsp. Montreal Steak Seasoning
3 Tbsp Basil Olive Oil
Couple large handfuls of arugula
2 Tbsp golden raisins
3 green onions, thinly sliced
1 carrot, grated
1/3 cup roasted red bell pepper, diced
¼ cup water chestnuts, diced
2 Tbsp almonds, sliced and toasted
1/3 cup feta cheese crumbles

For the Dressing:
3 Tbsp Basil Olive Oil
2 Tbsp Strawberry Balsamic Vinegar
½ tsp. coarse salt
¼ tsp black pepper

Preparation

Season the beef with Montreal Seasoning on both sides. Heat Basil olive oil in a skillet until shimmering and sear steak on both sides to desired doneness. Transfer to a plate and cover loosely with foil. Allow to rest about 10 minutes.

Assemble the vegetable salad ingredients in a large bowl. Whisk together dressing ingredients and reserve 2 Tbsp to drizzle over steak. Toss veggies and dressing until well coated and transfer to plates. Slice steak thinly and place on top of salads. Use remaining 2 Tbsp to drizzle over meat

Serves 2 as entrée salads or 4 as a starter
