Vegetarian Local Flair Sopes
This take on Mexican sopes featuring local farmers market fare and our delicious products including, Jalapeno Olive Oil, Garlic Olive Oil and Garlic Balsamic. This will be one that leaves your dinner guests begging for seconds. This recipe makes 4
Sopes are a traditional Mexican food made from masa corn flour. This can be found in the ethnic food section of most grocery stores and often in the bulk section of most health food stores. Pre made sopes can be purchased or tostada shells can be substituted. Making them from scratch is rewarding and fraction of the price.
2 c masa
1.25 c warm water
in a mixing bowl slowly incorporate the water into the dry masa flour. The consistency should be similar to play dough, and should not stick to your hands. If too much water is added, a small amount more of masa can be added to balance or allow the corn dough to sit a while and check the consistency. Once desired consistency is reached, incorporate into a large dough ball and cover your bowl with a damp cloth for 10-20 min. Separate dough into 4 even portioned balls, on wax paper or cellophane and flatten into a 1/4 inch disc and place in a hot cast iron skillet or flat cast iron pan. Flip every 3 minutes for 10 minutes.

1/4 tsp Hot Smoked Paprika
1/2 tsp Garlic Infused Olive Oil
-Smear finished beans on cooked sope
1.5 c sliced cremini mushrooms
1 sliced poblano pepper
1 slice orange bell pepper or pepper of choice
in a skillet heat 2 tbs Jalapeno Olive Oil
Saute with sea salt until tender, top black beans with veggies
1 green onion cut into lengthwise strips
1 tbs crema or to taste
1 tbs cotija cheese or to taste
1/8 c chopped cilantro
a pinch Hot Smoked Paprika & Sea Salt
1/4 tsp drizzle on each of Garlic Balsamic
