Tropical Chicken Kabobs

Tropical Chicken Kabobs

Kabobs are go to for me for grilling options in the summer. These grilled chicken kabobs are a perfect combination of tender marinated chicken with a variety of veggies. The slight heat from the Thai Chile Olive Oil with the sweet flavors of the Sex on the Beach Fruits make an excellent marinade that is sure to delight. This recipe works great with salmon, too.

Sex on the Beach Balsamic Vinegar
Thai Chili Olive Oil
Ranch Dressing Seasoning

Ingredients

1.5 lbs boneless, skinless chicken thighs or breast cut into 1.5-inch pieces
1 tbsp Minced Garlic
3 tbsp Thai Chile Olive Oil
3 tbsp Sex on the Beach Balsamic Vinegar
1 tbsp Ranch Dressing Seasoning

Optional: Veggies or Fruits! Any you like on the grill. Cut them into chunks.

Preparation

Skewers: If using wooden skewers, soak them in water for at least 15 minutes before using.

Marinate Chicken: In a large bowl, combine the chicken pieces, Thai Chili Olive Oil, minced garlic, Sex on the Beach Balsamic Vinegar and  Ranch Dressing Seasoning. Toss to coat evenly.

Marinate at room temperature for 15-20 minutes, or for more flavor and juicier meat cover and refrigerate for up to overnight. The longer the better.

Cook Chicken

Grill Option: Thread the marinated chicken pieces (alternating with veggies if using) onto the skewers. Grill for 10 minutes, turning once, until the chicken is cooked through, and the edges are lightly charred.

Broiler Option: Preheat the broiler and line a baking sheet with parchment paper or aluminum foil. Position an oven rack about 5 inches from the heating element.
Broil for 12-15 minutes, turning once, until the chicken is cooked through, and the edges are lightly charred.

Serve: Accompany with a dollop of plain yogurt seasoned with a pinch of salt and Ranch Dressing Seasoning if desired. You can also mix up more Thai Chili Olive Oil and Sex on the Beach Balsamic Vinergar and drizzle over the skewers while still hot for an added burst of flavor!
